Meal Planning For One: November 11th-17th

Meal planning isn’t always easy. Sometimes you have to work around changes. And this week’s change is that Max will be gone hunting so I am meal planning for one person only. This can be challenging because most meals make a large amount of portions, usually to feed an entire family. The approach I am going to take it to make simple meals and cut down the portion size as much as possible. I will also be making one meal whose leftovers I can freeze for a later time.

Meal Planning For One

Meal planning for one doesn’t have to mean only buying two vegetables and forcing yourself to make meals that all taste the same. You can still have a variety of meals, in smaller portions, preferably with less ingredients so as not to waste any food that might go uneaten.

If you’re worried that you will have waste, you should consider inviting a friend over for a meal, or donating some food to your local food bank.

I’ll be bringing most of the Butternut Squash Soup to Max’s aunt (it’s her favourite meal), I’ll make half or less of the veggie pot pie. Max should be back for the last three meals, all of which I can make less of if he isn’t back.
